recipe for an almond paste galette?
The New York Times has an article about a custom I had never heard of: putting small trinkets into a special kind of almond paste galette on Epiphany. I have to say that the almond paste galette sounds excellent, and I was wondering if anyone had a recipe for it, or anything like it.
Try looking up "Galette des Rois." In France, virtually no one makes this at home--everyone gets them at the patisserie. There's a little "fève" (a china figure) baked inside and whoever gets it is the king for the day. I still have a little china french revolutionary soldier that I carry around with me from 12 years ago...
Here in Spain there is a similar tradition, but it's a huge doughnut-shaped pastry/cake called Roscón de Reyes. Today they were selling the leftovers for 1/4 the original price!
