Trader Joes Cookbook Vanilla

What is this stuff?! Alcohol-free, ingredients are vanilla bean extractives, glycerin, xanthan gum and water. Can/should it be used 1:1 for regular vanilla? Has a weird initial taste but an okay vanilla flavor after that (I am used to the volatility of normal alcohol-laden vanilla at first taste).

  1. yes, can be used 1:1 as substitute for vanilla extract.

    is much better than vanilla extract in dishes that are not cooked/heated such as smoothies and iced-blendeds because the alcohol flavor of extract will detract from the dish.

    for baking and cooking use the extract.
