Leftover recipes for rib roast

foodiex2 Dec 26, 2004 08:06 AM

I made a standing rib roast for our Xmas feast. We were supposed to travel after the holidays so my original plan was to a cook a small 2 rib roast but when our plans changed I made much more than we needed so we would have leftovers. Anyone have any great recipes for a meal other than sandwiches or soup?? We have a LOT of meat. Thanks!

Shepherd's pie (leftover roast lamb is preferable but leftover beef roast also very good!)

When it's made with beef it's called cottage pie. But, as they say, a rose by any other name... belongs in a different recipe.

Easy. Carve off a full rib. Wrap it in an aluminum foil tent. Place in a 350 degree oven for 25-30 minutes. The heat should slightly render the fat, warm the meat but not cook it too much. Reheat your potatoes and veggies any way you see fit. The result should be a meal as good as the original.

Agreed. Why waste it? It's still prime rib. Just reheat as gently as possible to the lowest temperature at which its warm enough to eat and pretend that you're having it for the first time.
