osso buco/risotto side dishes

East Point Cook Dec 23, 2004 09:48 AM

I'm serving osso buco and risotto milanese on Christmas Day.
What else goes with these main dishes, or is the meat and risotto enough?

Bouche de Noel for dessert.

I'd probably serve spinach or broccoli rabe, sauteed in olive oil with some garlic, and maybe throw in some toasted pine nuts. It's nice to have something a little bit bitter to play against your rich entree and creamy-textured risotto.

    Happy holidays!

Marcella Hazan says the risotto with osso buco is the exception.

I find that osso buco is so flavorful and a little heavy that the risotto tends to overpower it. I would recommend combining the osso buco with simple egg noodles with butter and make some gremolata for the osso buco. Gremolata is finely chopped fresh garlic and parsley. In Italy, osso buco is sometimes accompanied by a simple green salad (i.e. butter lettuce) with a lemon vinaigrette to cut the heavy flavors with something light.
