Need Mashed Potato Recipe

Chowhounders,

I am looking for a mashed potato recipe. However, I'm trying to make it low fat and cannot use any milk products. I can use margarine, but no butter, cream, or milk.

    Around thanksgiving, I was looking to do the same...maybe this helps....

      A few years ago, for Thanksgiving, I started substituting chicken broth for milk, butter, etc. I whip the potatoes and just pour the broth in a little at at time until the consistency is right. I just added salt & pepper and no one ever said a word and the potatoes were always gone by the end of the meal.

        Michael Chiarello from the Food Network has an "olive oil smashed potatoes" recipe. All it has is olive oil and lemon zest. Good olive oil adds great flavor. Simple but good.

          i add parsnips to the potatoes-
          and fresh parsley
