Heart healthy food 2 or 3 days worth

I'm looking for recipes that are healthy, low fat, high fiber, that can be made on Sunday and will last for a few meals. Any thoughts ?

    How about turkey and bean chili? I have a recipe from Shape mag that I like, but I think most would be the same. And it freezes well.

    1. I have a recipe for spinach and chickpea stew served over rice that I love and when I make it it lasts me several days. I store the stew part seperate from the rice, and the garlic sauce that goes with it seperately. And then I heat it all up together in the micowave or stovetop and it's delicious. It's from Deborah Madison's, Vegetarian Cooking for Everyone. I can email if if you like.

          i really like most of the recipes...though some i've made haven't turned out so well. but yeah, overall i can depend on it for great meals.
