storage of nuts

I over-bought walnuts for my holiday baking and I've got a pound of pieces. The instructions on the bag stay to store them in an air-tight container and keep them in the fridge. Does that sound ok? Can they be frozen?

  1. They most certainly can be frozen.

      I second that. The freezer is the only place I store mine, and they keep for a long time.

    2. Yes, and yes. The deal with nuts is that the oil in them gets rancid very quickly. Walnut oil is, in my experience, among the most perishable.

      If you're going to use them within a few weeks, the fridge is fine. But if you have room or will store them longer, store them in the freezer. They can be used straight from the freezer.
