How can I use my dried apricots?

I have a 1 lb bag of dried apricots from Trader Joe's. Nice to snack on, but it's more than I need for that. I could use some ideas on how to use them up on some good dishes. What can I make?

    1. Oh, they are marvelous with vegetables. If the recipe is not full of moisture, I'd cut them up and hydrate them in liquid (water, a mild wine, stock, et cet) first. Then add them judiciously; they will help glaze the vegetables with sweetness but without an aggressive fruity flavor of their own.

        Great idea. What kind of vegetables do like with apricots?

          Zucchini and summer squash, with finely sliced onions or leeks, plus the apricots, has won raves from guests.

          Peas come to mind.

          And, more seasonally, cabbage.

      2. 2 words: chocolate fondue

        1. Hydrate, chop them up & add them into couscous...salads...add into chicken dishes...make apricot pie.

          1. Stick an almond in the middle, wrap with half piece of bacon, secure with toothpick and bake on rack until bacon is done & crispy. Mmmm!

            1. I like them in oatmeal cookies, usually with pecans, instead of raisins.

              1. How about making an apricot liqueur? Cut up the dried apricots, add to a white spirit (vodka) and add some rock sugar. Let it marinate for about 3 months or until the sugar dissolves. Drink straight or on the rocks with a splash of water.

                    1. Rugelach with apricot filling.

                      Muffins with dried apricots, chopped macadamia nuts, and maybe white chocolate chip drizzle over the tops...

                      1. Chop them up and add to cooked wild rice

                        1. I was at a party last where they put a dollop of goat cheese on a dried apricot and then topped it with a pecan half. They were REALLY yummy! And made for a nice presentation as well.
