to serve with chicken w/40 cloves garlic?

i'll be making this awesome recipe tonight, but what wine and veggies should go with it? is a salad the best i can do? (i've already decided i want to keep it to just some crusty baguette)

    I like a little sharpness to accompany this dish. Snow peas or green beans quickly sauteed in garlic & olive oil; salad with a basalmic vinagrette & goat cheese.

      Nice. And I like a little sweetness to go with the cloves of garlic so may I suggest adding a bottle of rose from Provence?

        When I make this dish, I serve it with cubed potatoes, roasted in a bit of bacon fat, then sprinkled with s&p and parsley.
