Need a recipe for icing my holiday cookies

I'm looking for an icing that's not brittle, but dries hard enough that it won't rub off easily. And I'd like it to be firm enough that I can pipe it on the cookies. Any suggestions?
(1) You can make the royal icing to varied stiffness
(3) or paint with 4 parts corn syrup to 1 part water - add food coloring.
I just made a espresso icing that was delicious, very easy to make, and easy to pipe onto the cookies. I found it in the most recent Gourmet magazine.
1 teaspoon instant-espresso powder
1 teaspoon vanilla
1 1/2 to 2 tablespoons milk (didn't have milk, used cream and a touch of water to thin)
1 cup confectioners sugar
Mix ingredients with one tablespoon of milk to start and then add more milk as needed to make it the right consistency.
