I made it with lemon juice and salt, so it should be inhospitable to the beasties - how long will it keep in the fridge?</content>

      <content>I don't care what anyone may say, its just a little oil and an egg yolk - don't keep it for more than 3 days, and make sure you keep it refrigerated. Keep in mind the cost of homemade mayo, and the cost and discomfort of illness. --BUT--  By all means make your own! Homemade is much better than store bought! (Yes even better than Hellman's) - just make only enough for  a few days! enjoy!</content>
