Crab mousse or similar spread?
I'd like to take advantage of the Dungeness season and prepare something mousse-like with strong crab flavor to serve with toasts or use for endive-stuffing. Any suggestions appreciated.
I used to be able to get dungeness crab frozen - -maybe Snow's brand. I used to make the SIMPLEST crab ball on the planet: 6oz crab, mixed with 8 oz of cream cheese, a little freeze dried chives and a grinding of pepper. You can either pile it into a bowl, or roll it into a ball and then roll it in chopped, toasted almonds. Yum!
