Suggestions for room temp potluck dish

It is time for the yearly holiday potluck at work and I am stumped as to what to bring. The dish needs to be one that does not require heating.

If you will scroll down a bit to the discussion of what food to take on a plane, I posted a sandwich that I make that is great at room temp. It is a hollowed out and stuffed baguette. Very garlicky and full of tasty things. I've taken it to pot lucks and also served it sliced in 2" sections at a cocktail party. Not a crumb left.
