best gingerbread men recipe?

looking for a recipe for gingerbread men/women. I prefer soft (but not too cakey) to crisp and with a nice "bite" spicewise. any favorites out there?

    This is a really good recipe that's easy to work with. I recommend increasing the ginger and rolling them just a little bit thicker than called for for chewy cookies. The reviews have many comments about their texture.

      I was looking for that recipe. I made it last year and rolled it out quite thinly and made big snowflakes with it. It was terrific and nice and crisp.

        It's a quite versatile recipe - roll it thin, and you can have crisp cookies, roll it thicker and you can have chewier cookies. The fact that you don't need to chill the dough before rolling, and that the scraps reroll very well, add to its appeal.

        My instant-decorating tip for gingerbread people, if you don't want to fuss with frosting after they're baked: use cinnamon red hots for buttons (press them in before baking). Not as fancy-looking as frosting, but they aren't plain, and the flavor works with the spices. Makes mass production or last-minute baking easier!

      my friend recently had a lot of scucess with a Delia Smith recipe.

        thanks to you all. decided to go a different route this year - went with ginger cookies - not gingerbread men from the recipe linked below. great recipe!! they were delicious.

          That's funny wurstle - I did suggest a good gingerbread cookie recipe when you asked, but the recipe you ended up making is my very favorite ginger cookie, and they're always delicious and popular.
