Buddha's hand?

My roomamte and I got a couple of buddha's hand citrons (fingered citron) at the food bank and are wondering what to do with them.

The lady there said put a chunk in soup or stew. (when I said, "oh, like thai soup" she said "no, any soup!" bah!) which is good, but I think I might be able to use it to make marmalade or candied citron.

Any ideas?

  1. Save a little to make your own citrus-infused vodka. Just add some to your favorite bottle of vodka and let it steep for as long as you can stand it.

      I just got one at the farmers' market. The grower said candying is pretty much the thing to do with them, as they're all peel and pith and not juicy.

        I ended up candying it. I sliced it into short segments and hunks of the "palm" area. It worked pretty well even though I got distracted by a blinking Christams light bulb and almost burned it all!
