I just got my meat grinder and am interested in preparing my own sausages. Also, we don't have a smoker - so can I smoke them once prepared on the stove top in one of those contraptions with the locking lid?

FoodTV's Alton Brown featured sausage-making on his Good Eats show very recently...

I was thinking along the same lines a while ago. This is an okay site.

Paul Bertoli's "Cooking by Hand" has an excellent chapter on sausage making. The recipes are precise and inspiring--and work well.

This is the site that got me excited enough about sausage making to take the plunge. I've only made the all-port brat recipe so far but have been really happy with it.

ps: I see that this site is part of a sausage web ring. There are probably lots of other good sites you can reach through the ring.
