Chicken with olives and lemon recipe needed

  • t

A while back I remember someone mentioning a recipe they perfected for chicken w/olives and lemon. I've tried searching for the post but I can't find it. I have a hankering for a stewish dish with chicken and lemon. If anyone has a terrific recipe can you please share? Thanks!!!

  1. I used to use the recipe in Paula Wolfert's excellent "Good Food from Morocco" exactly as written. Then I watched my Moroccan former M.I.L. make this dish. She always roasted the chickens separately.

Now I make the sauce from Wolfert's recipe, get it nice and thickened (with the olives and preserved lemons), and cut up a store-bought roasted chicken to add to the tagine pan. Heat through and serve. Faster, easier, and you can make the sauce ahead.

    1. Not sure if this is the one originally posted as you describe or not...y'all must think I work for Epicurious but I don't...I have made this recipe twice and in my notes, I cut the butter to 2 Tablespoons. This is very delicious.

      1. Here's a link (I hope - I'm so pathetic at this link stuff) to a couple of Moroccan recipes I posted back in September. The chicken tagine uses preserved lemons and olives. It is simply the best chicken tagine I have ever tried anywhere - including Morocco.

        1. Thanks, I now have a great cooking project for the weekend.
