I have an herb garden in the backyard so I stuff w/ sage, parsley and thyme. Crap, now I got that stupid song in my head again. Seriously, it does make a good turkey.

Along with the suggested herbs, put in cut up celery and onions.

My aromatics include onion, carrot, celery, 1/2 lemon, thyme.

I never liked it, but I grew up with an old Irish tradition of stuffing a turkey with mashed potatoes, celery and onions. It did keep the bird moist, tho.

What I'm putting into my 18-lb. unstuffed bird: halved lemon, halved onion, split head of garlic, thyme & sage.

I went with a cut up tangerine and an onion.
