will pre peeled parsnips brown?

Or do I have to acidulate them? McGee doesn't say. : (

    It looks like you got a bad bag of parsnips. If the parsnips are good, they are creamy white on the inside once peeled. This has happened to me too. Parsnips are costly and if they don't move them they can be raunchy and that's money down the tubes.
