Electric fondue pot - leave it out during a party?

I received an electric fondue pot as a gift and I'd really like to use it! I'm throwing a baby shower soon and a New Year's party - but they're both mill-around, snack on the buffet-type events rather than anything sitdown with scheduled eating time. Is there anyway I can make up a fondue or other cheesy-melt dip in advance and then leave it out without worrying too much about it, or is this a recipe for disaster?

Also interested in a good blue cheese fondue recipe if anyone has it.

  1. If your buffet is against a wall, you're golden. If not, disaster WILL strike. That cord is going to get tripped over and hot bleu cheese is going to flow like lava onto your floor. Also, keep it on low, and stir it up every now and then, if you've determined that you're able to keep it out safely.
