Baking Question...

I want to make Sweet Potato Biscuits (non-yeast variety) but will not have time to make them the day serving.


Can I make the dough, roll, cut, freeze, then bake right from the freezer? (no room in the fridge)

Or, should I make them the day before and just REheat them in the oven prior to serving?

  1. Freeze and bake. A biscuit does not reheat well ever, well unless you do something like make bread pudding with them. That is divine especailly with bourbon sauce.

      Do you think they will rise normally after having been rolled/cut/frozen?

        If they're made with just baking soda, probably not. If they are made with double-acting baking powder, definitely yes. There is a heat-activated ingredient in double-acting baking powder that will kick in when you bake it.
