Quinoa Bake w/Red Kuri Squash (very satisfying fall/winter dish)
Preheat to 400 degrees
1 T neutral oil (canola, peanut)
1 med onion, diced
10 'shrooms, sliced
bell pepper, diced
jalapeno (or other for heat, if desired)
1 zucchini, diced
garlic, minced, to taste
3 c water
1.5 c. quinoa (rinsed thoroughly to remove bitterness)
2 c. peeled, diced red kuri
1 c. kale, escarole or other hearty green, chopped
2 T finely chopped parsley

Saute ingredients thru garlic 5 mins add all others and bring to a boil. Transfer to a covered casserole and bake 35-40 mins or until liquid is absorbed. Remove, fluff, let stand 5 mins
