Looking for Empanada Recipes

In a few weeks, I'm having some friends over for dinner and I want to make several different kinds of empanadas. I'm looking for recipes that are different than the basic meat and cheese ones. Anyone have any ideas?

Also, does anyone have a favorite sauce for dipping emanadas?

    My husband and his family (from Argentina) put a little sugar on top of their empanadas - delicious!

        I made empanadas filled with balsamic mushrooms as a vegetarian option once. Slice cremini or white mushrooms, saute them in olive oil with finely chopped shallots or red onions. Then add a generous splash of good balsamic vinegar, let them cook a long time over low heat until they are really soft and browned. You can sprinkle some grated manchego cheese over the filling before you seal the empanada.

        Another favorite combination is browned ground turkey with raisins, pine nuts and sliced green olives. The combination of sweet and briny is really good!

          A friend and I were just discussing empanadas this morning. She wants to make breakfast empanadas and then freeze them. She is planning on putting eggs (scrambled-ish) in the empanadas and was wondering how they'd hold up in the freezer. Any ideas?

            I think empanadas would freeze really well, and the scrambled egg filling would work great.

            Don't have the recipe but some of the best empanadas I have tasted had black bean, potato, and sliced green olive filling. Check out the foodtv.com site - they have quite a few recipes including dessert empanadas such as chocolate and peanut butter.

              Thanks! I just looked at that site and the recipes look amazing. I am drooling at the thought of the Spicy Duck empanada.
