Looking for Empanada Recipes
In a few weeks, I'm having some friends over for dinner and I want to make several different kinds of empanadas. I'm looking for recipes that are different than the basic meat and cheese ones. Anyone have any ideas?
Also, does anyone have a favorite sauce for dipping emanadas?
Thanks...

Here's a good website with loads of empanada recipe links:

I made empanadas filled with balsamic mushrooms as a vegetarian option once. Slice cremini or white mushrooms, saute them in olive oil with finely chopped shallots or red onions. Then add a generous splash of good balsamic vinegar, let them cook a long time over low heat until they are really soft and browned. You can sprinkle some grated manchego cheese over the filling before you seal the empanada.
Another favorite combination is browned ground turkey with raisins, pine nuts and sliced green olives. The combination of sweet and briny is really good! -
