best sweet potato pie recipe

ok I was recently "converted" to sweet potato pie and am looking for reccs for the best recipe.Id like to vary my thanksgiving pie lineup this year.
And, seriously, if high quality pie can be made with canned sweetpotatoes, I am open to not peeling, just as I am not purist about cooking my own pumpkin to make pumpkin pies.
I'm surprised nobody responded! I used the recipe below and it was very tasty. I used Knob Creek bourbon, which is probably overkill, especially since it is 50% alcohol so I don't think it baked out all the way!
I also put 1 lb of toasted pecans on top and drizzled w/ maple syrup before popping it in the oven (tip from Alton Brown). Don't overcook it or it will be a too firm and dense. Oh, and you can peel and cube the sweet potato and steam it for 15-20 min insted of roasting them, to save time. Not sure if I lost a little flavor and sweetness by doing that though.
