I made 80 rolls of stuffed cabbage today for the Jewish New year holidays, in 2 pans. One pan with higher sides came out fine. The second 9x12 had aluminum foil on the top as well. However the aluminum foil had eroded holes in it after I was finished cooking.

Is this a chemical reaciton to the aluminum foil resting on the sweet and sour (acidic) sauce? Is it ok to eat? Is there anything I should do before freezing it for the hoidays? I scraped off the black spots fom the top of the casserole and put it in the refrigerator for overnight. Thanks for your help.
Happy New Year!

YUP...it's the acid.. lasagna in foil pans does the same thing. You can store the cabbage rolls in ziplock in the freeser and then reheat in foil pans.
