My mother, grandmother and as far as I can remember, the great-aunts and the like who made chopped liver back in the day all put the cooked components through a meat grinder. Until they got food processors, which I'll grant did do away with the coarser bits of egg. That's authentic and faithful for pretty much the last century.

If you want to go back to method great-great-grandma used in the Czar's time, search Google for a curved blade chopper. I don't think there was much in the way of specialty gefilte fish choppers, melon ballers or banana hammocks in the shtetl back in the day.

You may also want to try washing your clothes by banging them with rocks in the river. You get a completely different texture when you do it that way.

Yes, I know it sounds archaic, but the chopper and bowl system incorporates air into the mixture, for a lighter result. Of course you grind the fish, but you still need to chop!

Wouldn't a food processor also introduce air into the mixture? :)

No it doesn't. It works too fast, for example if you whip cream in the processor you get a much denser product than if you whipped it by hand. Which could be good or bad, depending on the end result desired. Also, with the fish or chicken livers you have to be careful not to get a mousse or paste consistency. Besides which, the hand-chopping is good exercise!

I found one of the choppers with four blades (crossed, like a "t") in an antique shop. Works just fine with the Vermont Country Store wooden bowl, just like grandma used to use!

Know exactly what your looking for...I bought a double "hacker" at a flea market for a a song...I already have a single one, but double works better... You might want to look in an antique or consignment shop.
