vegetarian chopped liver
i don't have a recipe per se but maybe i can help:
a well-seasoned pate of eggs, green beens, walnuts with a fair amount of carmelized onions should do the trick. my favorite vegetarian chopped liver used to be from veselka, the ukranian luncheonette in the east village, nyc. in general i find that cooking in extra-virgin olive oil can make things taste a little like chicken so you might want to try that.
the walnuts' bitterness helps to makes it a successful liver facsimile, especially because you are aiming for the bitter/sweet interplay you get from contrasting fried onions with it.
We had good success with a combination of chopped hard-boiled eggs mixed with sauteed chopped onions, mashed green beans or canned peas and carrots (which I like better for the sweetness of the peas), and shelled sunflower seeds, with salt & pepper to taste. This is good hot or cold, and tastes great on crackers.
