      <content>hi  just had my first taste and use of basket cheese.
it is something like a thick cream/cottage cheese... very bland.  But it melts beautifully... I even put it in an omelet... was great.. as long as you add other spices and tasty things to it.  Mine was an asparagus omelet, with italian romano grating cheese, salt and fresh pepper, steamed asparagus cut up, some cooked and crumbled bacon.. made small omelets in buttered pan.... when bottom was almost set.. I put small pieces of basket cheese on the top... then folded the omelet in half, forming a half circle...turned it one more time til it was golden on both sides... served it over slices of a grilled ham steak.  It was so good.

      <content>Since I can remember this Basket Cheese was referred to as "Squeeky Cheese".  It is made of cow's milk and is formed in a 12 to 14 oz basket weave on the exterior of the round.  It is salty but yum is it good.
 
Sorrento Cheese from Buffalo, NY was the supplier to the western NY local markets there and recently quit production.  Imagine a lifetime of this wonderful eating to go phooph and no explaination why?  My Dad is 88 and I am sending to an outfit in Wisconsin to ship him some.  Hope this helps </content>

I have a recepie for Italian Easter Ham Pie that I am making and it calls for basket cheese or "fresh cheese" and I'd like to know what it is?
