Czech Sausage, Name and location to buy?

My grandfather used to get this czech sausage from
an old butcher from the old country who was friends
with my gramps' mother. he made it himself, twisting
the sausage casing with wooden toothpicks.

the sausage was cold something along the lines
of "itsa nitsa" this is spelled phoenetically.
Can anyone help with the name or where it can
be bought, i suspect the east village may be
my best bet but let me know.

    1. I think the sausage you want is called Jiternice.

          Close, it's "jitrnice". Pronounced "yitter-nitsay".

Sadly, I don't know of a year-round source in NYC. For sure the Bohemian Hall in Astoria has them during the annual Pork-Fest.

Manitowoc (Wi.) Herald Times Reporter 4-14-04 Food section had almost full page article on this. Paper is on the web, you may be able to read. If not, reporter is at sweiss@htrnews.com. I grew up eating this sausage pronounced "etherneatsee" from a farmer Uncle who made his own. Good luck!

              • I believe the spelling is yternice. It is a pork and barley sausage which we make each winter.

                  1. YOU CAN BUY THIS SAUSAGE AT THE SOLON, IOWA MEAT MARKET. WE ARE HAVING IT FOR LUNCH TODAY!!
