The recent thread about "flaky" Claude and his wonderful French bakery got me craving canneles bordelais. Does anyone know if Claude or anyone else bakes them and if so, when? Many thanks.
I only know these from cookbook recipes. The ones professional pastry chefs make might be a bit different. The cannele is make from a batter with the consistency sort of like a crepe batter, baked in special individual portion sized molds that are basically ridged cylinders. They end up with a crispy crust and soft interior and the whole thing is chewy too. They tend to be pretty sweet and the one I had were vanilla flavored.
