Rhodes 24 - Menu recs for party of 30

Hi all. As part of a meeting with colleagues from all over the world, our conference team has booked Rhodes for dinner on a Saturday night. We have to select one starter, one main course and one desert from the choices below. The organizer has recommended the items with an asterisk, but some of the other choices sounds fabulous. Any thoughts?

Starters

Chunky tomato soup with garlic croutons and Parmesan shavings
Cream of butternut soup with pumpkin seed and cheddar cheese biscuit
Black forest ham with grilled asparagus spears and celeriac remoulade
Gravadlax – slices of dill cured salmon with lemon, gravadlax sauce ***********
A terrine of pressed pork, prunes and Armagnac, served with walnut bread and apple and mustard seed chutney
Salad of tomatoes, warm pesto toasts and soft goat’s cheese

Main Courses

Pan-fried chicken breast on leaf spinach, tomato and thyme fondue, melting Swiss cheese with a shallot and white wine cream - (Buttered new potatoes apart only)

Roast aged Scottish sirloin of beef with a traditional Yorkshire pudding, caramelised onion
gravy, roast potato fondant and gravy - (Sugar snap peas apart only) *********

Slow braised lamb shank served with soft mashed potatoes - (Sugar snap peas apart only)

Honey roast duck leg confit on steamed pak choi with a potato and prune gratin, sherry gravy
(No vegetables apart)

Roast salmon with leek and Parmesan risotto and sesame fried baby squid - (Sugar snap peas
apart only)

Pan-fried sea bass with spring onions and chilli, soft mashed potatoes, soy and mirin dressing
(Sugar snap peas apart only)

Vegetarian Main Courses

Butternut, gorgonzola and sage tart with baby spinach and artichoke salad

Aubergine macaroni spaghetti, wilted rocket and Parmesan shavings *****************

Desserts

Lemon posset with orange biscuits
Crème brulee
Warm chocolate and banana pudding with malt chocolate ice-cream and chocolate sauce
Bread and butter pudding **************
Rhubarb and custard cheesecake served with a rhubarb sorbet
Cheese with bread and biscuits
Mixed chocolate truffles to be served with coffee £ 2.25 per person
