La Rosa Nautica was pretty good but the best -- by far -- was Aqua, on the playa Barranquito just outside Lima.

Peru
- yummies we found everywhere: puffed mais (very large corn) on the street; coca tea, mazanilla (apple) tea; puffed quinoa and kiwicha sprinkled on drinkable yogurt with sliced fruit (like papaya, pineapple or melons) for breakfast; Pisco sours; oh those avocados (never had such good avocados); licuma ice cream, guanabana ice cream; pineapple + papaya juice; zillions of yummy kinds of potato; sweet potato chips

Lima - ceviche, especially with the octopus & black scallops; often served with mais (very large steamed or boiled corn kernels); I'm told the Chinese food in Lima is awesome but we didn't have any

Arequipa - rocoto relleno (stuffed spicy peppers) -
Arequipa restaurant - Zingaro on Santa Catalina - Novo Andino: local freshwater shrimp risotto; quinoa risotto, quinoa tabbouleh, alpaca carpaccio with great staff and nice atmosphere, the art on the walls is wonderful (done by an Italian ex-pat who lives in Arequipa)

Urubamba - trout!
The Muse Restaurant - cheeseburger (outstanding, really!)
Los 3 Ke~nos (have no idea how to get that symbol on the n) - the chef is Ricardo and he can make you any of the Andean specialities, he's really friendly and so are the waitresses and the place has a fireplace - antichucos (beef tenderloin kebabs), lomo saltado (argentine beef sauted with onions & sweet peppers), trout fritters, smoked trout ravioli with smoked mozzarella, papas a la huancaina (potato with spicy creamy sauce)
I also know a place in Urubamba that can make you Pachamanca - let me know if you want details

Cusco
Pucara Restaurant - very very good coca tea (with lime), dieta de pollo (clear broth chicken soup)
Pachamama Restaurant in San Blas - really good local food for very little money
