We've already got Oaxaca City on the itinerary, but would love input on other places in Mexico for great meals, markets, cooking schools, local specialties, etc. We've got over a month and we're wide open! (Though we have already traveled extensively in Quintana Roo and the Yucatan Peninsula, so we're not going back there this time - Chiapas is the farthest from Mexico City that we can go).

Thank you!

If you haven't done it yet, try a search on this page. I know there are fairly extensive posts from the last year on Guadalajara, Morelia, Acapulco and Huatulco.

I recently spent a week taking cooking classes in Puebla, about 2 hrs drive south east of Mexico City. Can't say enough good things about the city, the food, and the classes.

My trip report has more info.

I concur with the suggestion to search the board here. There are quite a few good recommendations for Mexico already. Below is a list of links to cooking schools in Mexico, all of them outside Mexico City

http://www.marilyntausend.com (to various locations)

http://www.casacerrosagrado.com (Teotitlan del Valle)
http://www.xilonen.com.mex (Lake Chapala)
http://www.epiculinary.com (Tepoztlan)(as featured in the January 2005 issue of "O" magazine)

Also Culinary Adventures of Mexico in San Miguel del Allende

I can vouch for Casa Cerro Sagrado, Seasons of My Heart, Xilonen and Marilyn Tausend.

If you go through Monterrey, good meals can be had at El Gran San Carlos - cabrtio, some Spanish will be helpful as you will be the only non-locals in the place. La Valencia and La Caterina are also excellent and fairly upscale. Also in Monterrey you can tour Cervecerria Moctezuma, tours in English or Spanish.
