Need a recipe for Pollo a la Brasa. Can anyone help me?

    This is an old post but I've been on a quest to find a good recipe for Pollo a la Brasa myself. I finally found a web site that has a few different recipes (and it even has a recipe for Aji sauce)! I thought that it was a pretty good find so I thought I'd share with anyone else on the same journey:

      If you don't own, or don't have access to, a Peruvian cookbook that includes a recipe for pollo a la brasa, you can get a list of ingredients at the website link provided below. However, the real difficulty in preparing pollo a la brasa isn't the marinade for the chicken, but the necessary equipment to cook it, which involves a rotisserie over real wood coals in order to give it that smokey flavor. At Pollos a la Brasa in Los Angeles, for example, the wood is visibly stacked up behind the restaurant, and you can smell the wood smoke at least a block away. Also, what is pollo a la brasa without aji? So, you'll also need the recipe for aji if you don't have it.

        Necesito averiguar donde puedo comprar dos hornos de carbon para un restaurante de pollos a la braza.
        Me pueden ayudar con un par de datos? Yo vivo en Annandale, Virginia, por lo que me gustaria saber de alguien que tenga estos hornos cerca a esta zona. Si me pudieran conseguir el e-mail seria mucho mejor.

          Somos Peruanos residentes en USA. Por 13 anos aprox. y nos gustaria saber del recipe del POLLO A LA BRASA, con la finalidad de saborearlo en casa aunque no sea el 100 por ciento (Horno). Gracias por tu tiempo y comprension.
