On Oahu, Macadamia Nut Pancakes at Boots and Kimo's

From the Mainland I have been looking for the best Macadamia Nut Pancakes and I have found a name of a restaurant that might have them– Boots and Kimo's Homestyle Kitchen Restaurant. I am not looking for just any pancakes but, Da ones I eat down Napili Bay on Maui long ago – Broke da mouth! I have been dreaming of the Golden Syrup, thick, rich, sweet with a true butter flavor. I recall shaved macadamia nuts on top. I am told that “Kimo” (May he Rest in Peace) was the chef who created the special syrup. That he sold the Gazebo in Maui and now the recipe and long lines of people wanting to eat his pancakes and syrup have moved to Boots and Kimo's on Oahu. True, or am I dreaming?

    OK...so a couple of years have gone by since the last post. I finally made it to Oahu and headed to Boots & Kimo's and got there right when they opened. I was not disappointed. I licked the plate clean and there was positively no macadamia sauce left on my plate. If they sold it in a bottle, I'd put it on just about anything. The very best pancakes I have ever eaten.

      Can someone tell me what time they stop serving these pancakes? Or is it an all-day breakfast menu?

        it is a breakfast/lunch place, 7-2. they serve the same menu all day.

      you are right on bruddah. i was just there this past saturday. let me say that i don't usually enjoy pancakes -- they bore me. but i freakin' crave these things! get the banana pancakes, really sets it off....i'll agree that the mac nut shavings are a tad light, but it don't matter, the sauce will take over your brain. also good on the french toast. also good on a spoon.

      as an aside, went a little outside the box and also ordered the eggplant parm ommlette. must say it was quite tasty....tender fried eggplant bits, nice mushroom slices, a creamy herb sauce with swiss cheese (which i was very nervous about, but it actually blended nicely) and a marinara sauce that was pleasantly balanced. i was expecting a hyper sweet out-of-the-jar sauce, but das was goot. frankly, the egg was superfluous, it was there as the ommlette was well constructed, as you'd expect from B & K's, but it didnt add too much.. maybe i like eggplant parm for breakfast? who knew?

        Fantastic mac nut sauce on the pancakes - I try to always have breakfast here when I'm on Oahu. I've been trying to find a comparable recipe that I can make at home, and I think I've found one:

        c. macadamia nuts
        1 T. butter
        2 T. flour
        1 c. whole milk
        c. cream
        3 T. sugar
        tsp. kosher salt
        2" vanilla bean, sliced lengthwise and seeds scraped out - or 2 TSP vanilla extract
        3/4 tsp. lemon juice

        Process the macadamia nuts in a food processor until finely ground. Spoon the nuts into a medium saucepan and fry over medium high heat for 5 min or until fragrant. Lower heat to medium and add the butter, stirring until melted. Stir in flour and cook 1 min. Slowly pour in milk and cream, constantly whisking the whole time. Scrape the seeds out of both vanilla pod halves. Add sugar, salt, vanilla seeds, and vanilla pod to the pan. Cook 5 min or until thickened, stirring constantly. Stir in lemon juice. Pour sauce through a fine strainer into a serving dish. Serve warm.

            Is this 1 cup of nuts and 1 cup of cream?

              they just use french vanilla ice cream, melt it and add mac nuts. My sister worked at the kailua safeway and they were always coming in buying that stuff.

              Boots & Kimo's definitely has fantastic mac nut pancakes but I am not sure if this syrup is as wonderful as you described it. I have to say that I thought they skimped out a bit on the mac nut shavings in the syrup (which was more on the thin than thick side). Nontheless, they were quality pancakes that I would quickly return (and wait in long lines) for!

                We were there just 2 weeks ago and LOVED the macadamia nut pancakes with sauce at Boots & Kimo's (but I have no idea if this is what you actually remember!). We went around 8am on a weekday and only waited for about 5 minutes. The guava juice and orange-passionfruit juice were also nice.

                  Wow, lucky you. Thanks for checking in. Can I ask you more about the pancake topping? Was the topping a golden / Caramel color, very thick (almost like a cake batter), a rich butter taste, sweet (maybe a Caramel flavor?), a pronounced graininess to it, and have shaved macadamia nuts all over the top of it? Did the topping remind you of cake batter at all? Or, how would you describe it? You say that you, LOVED the macadamia nut pancakes with sauce." What was it about it that you "LOVED." Finally, how did you learn about Boots and Kimo's Homestyle Kitchen Restaurant? Thanks so much.

                    Absolutely agree that the macadamia nut pancakes with sauce are the best I've ever had. A trip to Oahu would not be as memorable without having breakfast at Boots and Kimo's. Beware: they don't open until 7:30. Get there at 7:30! Go a little earlier & catch the sunrise at Kailua. You won't be disappointed by the sunrise nor the pancakes. They have moved a few doors down to
