Here's my list of good oyster restaurants (in no particular order):

Aquagrill
Balthazar
Mary's Fish Camp
Pearl
Blue Ribbon

Haven't been to the Grand Central Oyster Bar in an eon--perhaps someone else can chime in on that one.

the oyster bar is, by and large, very reliable when it comes to oyster dishes (yeah, it would seem to go without saying, but few things that seem simple really are). it's best at lunch, or early in the dinner queue, when a goodly number of the little fellas are available. they can sell out of some species fairly quickly, but their raw bar items are usually impeccable. i like the pan roasts as well, but they can be heavy going at times (as in times when you have to engage in a great deal of post-meal movement)...

I second the oysters and the pan roast oyster stew (prepared right in front of you) at the bar. WONDERFUL!

But, I caution you to avoid the dinning room menu. Don't order even the pan roasts from the main kitchen. Unfortunately, they don't compare.

The Oyster Bar in Grand Central has a tremendous selection, coupled with a great atmosphere and huge wine list. Sit over at the oyster bar section and slurp away. Perfect.

Shaffer City Oyster Bar and Grill on 21st between 5th and 6th is a once-hidden-now-more-revealed gem that takes its oysters very seriously. Also a fun, old seafront bar-type atmosphere. Also highly recommended.

Just had for dinner tonight at NY Noodletown: "Oysters with Barbecued Pork," one of their casseroles that arrives bubbling at the table. Six three-to-four-bite (HUGE) fried oysters with lots of chunks of tender, sweet bbq pork, several shiitake caps, lots of scallions and ginger, in a slightly sweet-and-gloppy five-spice-flavored sauce. As you said, Oysters....YUM!
