Starting at the top is Honumura An (just off Houston Street  on Mercer in Soho)
This is the best japanese soba noodle house in NY. Going there is like a mini vacation. Relaxing and delicious.
One or more  notches down is  Mechanko Tei The one I go to is on 55th between 5th and 6th. Ramen and Udon noodles mostly  in soup broth. I like this place for lunch. Its cheapish under $15.00

      <content>Sobaya (229 E 9th St, between 3rd &amp; 2nd) has my vote for soba and udon. Prices are much lower than Honmura An, but the food and service are always topnotch. Just about any time you go, you'll see a guy in the front rolling out dough for fresh soba &amp; udon. I've had pretty tasty soba at Nobu Next Door, but I don't have depth of experience there, so I can't wholeheartedly recommend it. Omen (113 Thompson St) has great udon soups, and I've also had an incredible fried, wrapped soba dish there. I can't recommend any ramen in NYC, but there have been many discussions about it on these boards.</content>

      <content>for soba noodles, i also like honmura an and sobaya. another one to try is hyotan nippon in 52nd between 5th and 6th aves. i love the cold soba with nameko mushrooms.

      <content>There is an amazing little place on 10th street between 1st and second- can't remember the name but it's half way down the block on the north side. It's counter seating only and there is a huge boiling pot of seafood stock with all sorts of vegetables that looks extremely appetizing, but I usually go for the Ramen in Miso, which has an amazing golden colored broth. It is topped with shredded chicken and bean sprouts and it's a little spicy- a great meal for 7 or 8 bucks.</content>

      <content>There is also a Japanese noodle house in Chinatown on Mott street below Peking Duck house and right above the arcade.  I have some Japanese friends that swear that their Ramen is one of the best.  This restaurant is a chain in Japan.  Their specialty is straightm not curly, Ramen noodles (I think it's Chinese style) with a rich pork soup.</content>
