Anyone with the faintest idea how Greenglass smokes his sturgeon to get that moist, I would love to hear from You. I catch sturgeon in Oregon, but can not get even close to the moist stuff Greenglass sells. Please reply to firstname.lastname@example.org.
I believe that is the one. I order by phone and they ship overnight. The sturgeon (and H & H bagels) are absolutely the best there is.
I have never seen the duplicate of their smoked sturgeon and there are dozens of places that offer it in Oregon. It is moist, flaky, and delicious.
I make my own salmon lox (with caught King Chinook Salmon) that is equal or better then NY lox (it is a curing process). I want to make my own smoked sturgeon (and have tried, but it comes out dry and tough).
