Greenglass sturgeon

  • h

Anyone with the faintest idea how Greenglass smokes his sturgeon to get that moist, I would love to hear from You. I catch sturgeon in Oregon, but can not get even close to the moist stuff Greenglass sells. Please reply to

  1. Do you mean Barney Greengrass on 541 Amsterdam? If we find a good site, we'll let you know.

I believe that is the one. I order by phone and they ship overnight. The sturgeon (and H & H bagels) are absolutely the best there is.
I have never seen the duplicate of their smoked sturgeon and there are dozens of places that offer it in Oregon. It is moist, flaky, and delicious.
I make my own salmon lox (with caught King Chinook Salmon) that is equal or better then NY lox (it is a curing process). I want to make my own smoked sturgeon (and have tried, but it comes out dry and tough).
