Would Restaurant

We went to our favorite restaurant in the Ulster-Orange county area, the Would Restaurant in Highland for Thanksgiving dinner. I was pleased I didn't have to cook or suffer through turkey as the flesh part of my thanksgiving meal. In fact, as my parents and husband were tossing down the tender free-range turkey, brussels sprouts and pearl onions, seasoned mashed potatoes, excellent chunky cranberry sauce, heavenly sweet potatoes and a surprising stuffing which tasted like it was made out of glue and a loaf of that 50 cent "stuffing bread" from the grocery store (I know all this because I had to try everything), I dined on a delicate salmon filet cooked rare, manna-like pureed turnips, braised cabbage and apples. For dessert we had our choice of traditional pies or a rich-sounding cheese cake only a masochist would eat after a meal like that. The traditional meal cost $26.95 a person and included "left overs" which meant everything but the pie, and we have enough bird left for every chow hound on the planet.

The Would Restaurant is always good and has a well-balanced menu using local ingredients whenever possible. There is always an imaginative vegetarian menu which isn't just vegetables and/or pasta. The only thing one must put up with is the sometimes ragged service. Sometimes we get a waiter who seems to struggle with words like "mesclun" or "arugula" or concepts like "chicken sausage with sage" as if the very idea is incredibly foreign to them. What is wild is that these waiters are all culinary students at the CIA. Go figure. Nevertheless, a worthwhile visit.
