<content>I love the guys at the A+S Pork Store, but there's no getting around it: Union Market has some *incredible* meat. The marbling on their beef is off the charts -- definitely the high end of prime. Even their lamb has more marbling than you'll find at most butcher shops. When I'm walking by, I stop in sometimes just to gawk at the meat case, even if I'm not gonna buy anything -- it's that impressive.

Fortunately, the Pork Store's still the place to go for mozzarella, pizza rustica, and sandwiches.

<content>I'm a fan of Great Western and have touted it on this board many times. But when the Pork Store became a full-service butcher about a year ago (they had previously stocked pork and some beef, but not lamb, not much veal, etc.), their quality surpassed Great Western. Great Western never has prime-grade beef, while the Pork Store always has at least one cut that's prime.

But now Union Market has surpassed the Pork Store. Almost everything they sell is prime -- and it's the high end of prime, with ridiculously abundant marbling.
