        <content>Yesterday I decided to do some cebiche.  Cooking it is the easy part. The tough one is finding fish fresh enough to be eaten raw (or more precisely marinated in lime for about 15 minutes). I visited three large fishmongers in Sutphin Blvd, Jamaica and nothing came up to standard. A couple of Queens Boulevard stores were no better. Then I went back to Forest Hills and in my second attempt (the Korean lady near Ascan) I found a very fresh sole that ended up as a beautiful cebiche. I actually like that store. It is a bit on the expensive side, but it is impeccably clean, a big plus in fishmongers. Problem is that the carry a very small variety and all you can see is filleted fish. I prefer to buy the whole animal and have it filleted. There are so many things to do with the bones and the head...
Is anyone familiar with another clean fishmonger, with a larger variety of fish and seafood anywhere in or let's say no more that a 20 minutes drive from Forest Hills? </content>

      <content>Go to the Korean store then proceed a couple blocks due west on the same side of Austin St.  There you will find a bigger and better FH fishery.</content>

      <content>Theres also one about 10 blocks west if you continue on Austin (past B&amp;N/GAP/etc) onto Yellowstone  near the instersection with Dartmouth.

      <content>We have been going to this fish store for years.  It is out of the way for us, but when we want fish it is the only place we go to.  It is immaculate.  Prices are good, and the service is great.  
They do a sort of mail-order business sending sushi grade fish to locations out of the city.  I have seen them preparing orders to send to the midwest.  They also supply at least one restaurant with sushi grade tuna.  
They provide great service, and are up to any special orders you may have.</content>

      <content>Thanks, Caren and Larry for the tip. I hadn't noticed the store, maybe because I very seldom drive by Yellowstone. Will try it next week end. Sushi grade yellowfish is one of the best possible options for cebiche. I hope they carry it.</content>

      <content>Thanks a lot, this was the other fishery in Austin where I couldn't find fish fresh enough to eat raw. They are bigger, yes, but I live in the neighborhood and have seen both fisheries at closing time. The cleaning standards of the Koran store are far higher.</content>
