I've been jonesing for some good fried chicken. I really like the taste of KFC, but can't patronize the chain. I have my reasons -- personal politics.

But this is board about food -- so my question is, can anyone suggest a good KFC substitute? I've been all over the city looking for one.

I tried: Maroons on 16th. Sylvia's in Harlem. Amy Ruth's in Harlem. Charles Southern Kitchen in Harlem. Any number of Kennedy Fried Chickens. Dallas BBQ. Bone Lick BBQ. Popeyes. Roy Rogers. But nothing seems to hit the spot.

With the exception of the last two, the fried chicken is pretty basic. Not bad, but I want some more spice to it. Do I have to compromise my principles to get what I want?

The fried chicken at Blue Ribbon in Soho has (I believe) cayenne pepper in the batter. Crunchy, greasless and spicy, like Popeye's must be in heaven.

Can I get a witness? I believe someone on this board recommended it to me a few months ago.

Broasted Chicken is what you want. It's not necessarily the "Fry" that makes the chicken meltinyourmouth tender and juicy, but the pressure under which it is fried. You can't do that process without some pretty expensive equipment. KFC's got it, as do places that do "broasted" chicken. Sea World on 23rd street has it... and it's pretty durn good.

If you want to try to make it at home, you can try Cooks' Illustrated's recipe which is outta site.
