Christmas borscht at Velselka--yum!

I've always been a fan of Velselka's borscht--thick, full of shreddy meat and beets, the best thing with some challah on a snowy day. But when I stopped in last week, I noticed they had something called "Christmas Borscht" on the menu too. When I asked about it, the waiter brought me a little cup to try. Wow! A thin, very tangy beet broth, with musky little dried-mushroom dumplings in it. I've seen recipes for this in Polish and Ukrainian cookbooks, but never had it...but this chilly, snowy weekend, it's a must!

    I also LOVE their borscht. I just got the Veselka cookbook as an early Christmas present, the recipe is in the book, if you'd like it I can try to scan and send it to you.

      Does Veselka still have this borscht? Worth a trip to take out?

        They always have two types of borscht...and if I recall, the Christmas Borscht is their vegetarian one. I prefer the hearty meat version which is also sold year round.

          LOVE the Christmas Borscht at Veselka and the every day variety they serve as well. Does anyone have recipes for either one of these?
