My favorite polenta in the known universe is at Union Square Cafe, where it's on the appetizer (or sides) menu. It's moist and porridgy, not dry and hard (although I also like that variety if done properly). They melt mascarpone cheese on the top. Eating it is a blissful experience that defies description.
