Counter on 1st Ave. between 6th & 7th is a good option...somewhat upscale. And Caravan of Dreams around the corner on 6th is another good choice.

given the lack of specificity, i'll specify my favorite vegetarian experiences:
Hangawi (prix-fixe Korean)
Vatan (ayce Indian)
Gramercy Tavern (for the vegetarian tasting menu)
Gobo (pan-asian vegan)
of course you can eat quite well as a vegetarian at almost any Indian, Italian, Asian, etc. restaurant, and if you eat fish, that goes for almost any restaurant other than a steakhouse too.

i love angelica kitchen, for vegan food.
also, i recommend the vegan desserts at candle cafe, but am not a huge fan of the rest of their food.

Two amazing sandwiches at Roomali on east 27 near lex - not really a resto - more of a takeout but if you like spicy indian, the chickpea wrap (like falafel) or the indian cheese wrap are both over the top great - and you can bring a meat-eater for the spicy chicken bihari kebab wrap.

Devi serves some of the best Indian cuisine in the city. There are many superb vegetarian dishes on the a la carte menu, and they offer a vegetarian tasting menu as well.
