Disclaimer: I am not a vegan, but I have friends and relatives who are, so I occasionally eat at vegetarian/vegan places in New York.
 
Second disclaimer: None of the places I'm going to list are exactly "white tablecloth" places, though all are nice.  Hopefully someone with more familiarity with the cuisine will be able to recommend vegan places with a more formal atmosphere.
 
That being said..
 
The old standby for vegan food in NY is the Angelica Kitchen on the Lower East Side (East 12th St near 2nd Avenue.)  The cooking is hearty and inventive, and the staff is friendly.
 
For tea, coffee, and light food/snacks, check out teany on Rivington Street.  A nice place to get breakfast or take afternoon tea.  (http://teany.com)
 
There are several good Asian/Indian vegetarian places; I would think that it would be possible to order strictly vegan meals there.  A good Korean place is Hangawi, in Murray Hill.  A good Indian place: Thali, on Greenwich Avenue in the West Village.  
 
Hopefully others will have suggestions as well.

      <content>Another standby for vegetarian (and I think it might be vegan) is Caravan of Dreams on the LES. I haven't been there in ages, but it was very good, not white tablecloth either, to the best of my memory, but very good food.</content>

      <content>There are a fair amount of vegan/vegetarian restaurants with pleasant rooms to dine in, albeit, many are not completely vegan but have accomodating menus.
 
Gobo on 6th Ave at 8th Street
Zen Palate on Union Square East &amp; 17th St (other loc's also)
(both Chinese influence)
Counter on 1st Ave bet 6 &amp; 7 St. (Southern influence)
Terra 47 on 12th St bet University &amp; Bway (Organic, American)
Hangawi on 32nd Street west of 5th Ave I think (Korean w/ a beautiful dining room)
Angelica's Kitchen on 11th St bet 1-2 Ave is the Vegan rest mecca. Not white tablecloth, but nice casual.
Josie's on 3rd Ave &amp; 37 St / 74th &amp; Amsterdam. (American)
Sacred Chow on Hudson St is a good cafe
Chinatown option: House of Vegetarian on Mott St  just south of Canal.
FYI: Whole Earth Bakery on St Marks bet Ave A &amp; 1st is a vegan bakery, definitely better for take out

      <content>I recently ate lunch at Quintessence, east 10th St between 1st and A.  It's totally rawvegan, but everything we ordered was very, very good.  I was quite surprised actually.  It was very filling and really flavorful.  It might be a good place to sit down for lunch/brunch, cute little room.</content>

      <content>I haven't been to the vegetarian dim sum place in Chinatown, but that might be good to try.  For something on the upscale side Gobo, in the Village, would fit the bill especially in terms of ambiance.  I have never much liked the food at Herban Kitchen but Herban, in soho by the way, has that cozy New England vibe.  Although New York's fancier Indian places might be out on the dairy count, I recently had a nice meal at Madras Cafe in the East Village.  It is a friendly neighborhood place, near but not on infamous "6th street" and is known for being vegan-friendly.  The special utthapam (I think it has brown basmatti rice and a greater variety of pulses) was awesome and tasted practically oil-free.  It also had a lot more chew factor going on than a more typical utthapam.  Angelika, an old standby, is great, a plus besides the reliable food being that you can bring your own wine.  They offer a combination of old fashioned macro-type stuff, and more experimental, flavorful food.  I haven't eaten there in a while however.  Super-cosy Organic Grill (I'm never sure about the name but it is on the west side of first avenue between 7th street and St. Marks...right next to Sticky Fingers Bakery), nearby, used to be my new favorite but according to a recent visit they have gone way downhill. :(  Le Pain Quotidian, a Belgian bakery chain all over Manhattan has a lot of vegan options for food.  The bread is also probably vegan for the most part, although the pastries certainly aren't!  
 
Quintescence is awesome if you want to do raw foods.  There were three branches although I don't know if there still are.
 
New York doesn't really have anything like San Francisco's Millenium unfortunatly.  Something else you might want to try is the Friday Night Dinner at the Natural Gourmet Cooking School, near the Flat Iron building.  I haven't been in years but it is reasonably priced.  If you tell them your party is vegan when you make your reservation, I am sure they will take care of you.  And you can also bring your own wine..You probably should call them well in advance.
 
There is also a number of good places in Brooklyn that are easy to get to.  Try the Outer Boroughs board for them.  Have a great trip!
