<content>Murray's Cheese Shop. According to their website, they've got Alsatian Munster, described as "Soft, cow's milk cheese from the eastern side of the Vosges Mountains near the village of Munster, meaning 'monastery,' developed by vegetarian Benedictine monks as early as the 7th Century. Cellar ripened for 2-3 months, the rind is washed every 2-3 days." Price: $17.99 per lb. The main store is at 257 Bleecker Street; they also have a shop in the Grand Central Terminal Market.

<content>The Artisanal web site says that their Cheese Center has Appenzeller and Gruyere. That probably (but not definitely) means that the cheese counter at the restaurant has them too. I'm partial to Artisanal, but depending on your geographical situation, one of the other places might work better for you. I suspect the prices will be a little lower elsewhere, too.
