        <content>I have recently become a fan of the flavor and texture of raw meat.  I've tried kitfo, carpacchio and of course raw fish, but I am curious to see what places are recommended for raw meat.  I'm looking in particular for a Vietnamese place that serves nem chua (the raw pork), but any places that serve tartar are welcome.</content>

      <content>I too am a fan of raw meat dishes upon occasion. Most good Korean restaurants serve a raw meat dish. It is made with good quality chopped or diced beef that is ice cold. At the table they mix in an egg, some sweet and tangy sauces and finely sliced Asian pears. Tastes fantastic.</content>

      <content>Les Halles and Cafe Un Deux Trois are the two places in the city where I've had steak tartare.  Both were prepared tableside and both were very good.</content>

      <content>As I remember, there were some Vietnamese restaurants in the city that offered raw pork about 25 yrs ago.  I don't recall if anyone became sick but the Health dept forced it off the menu. Apparently they were using US pork which is no good if uncooked. Apparently the pork in Vietnam is OK in the raw state due to what the pigs feed on and is common on the menus over there.</content>
