        <content>I'm looking for one of those multi-class programs that take you through all the essentials of cooking - knife technique, sauteeing, grilling, etc.  I see from some online research you've got Institute of Culinary Education offering several multi class options for $600 or so, and the French Culinary Insitute has that "hard core" 5 grand 22 week course.  Has anyone tried these options, or have any other suggestions?  Again, I'm not looking for "speciality", one time courses, rather multiple sessions that cover the basics. Thanks!</content>

      <content>Culinary Explorers has a three class session called Kitchen Confidence for about $200 (I think) they also have a follow up three class intermediate level. 
A friend took it and enjoyed the class a lot. You can check them out at this site:

      <content>The "Tech" series that you saw at Institute for
Culinary Education are excellent.  I took Techniques
of Fine Cooking I a few years ago and learned a lot.
Since then I've taken numerous other classes, but
Tech 1 gave me a terrific foundation.  The first
of the 5 sessions will give you a good introduction
to knife skills, but if you want to start off really
well, you might consider taking Knife Skills 1
beforehand.</content>

      <content>A slightly more involved course can be taken from New School - a monthlong program (4 hours a day 5 days a week) and from experience most of the people take it less to become professionals and more to become more comfortable/confident in the kitchen (plus some waitrons in there who just want to know what the back of the house is up to). Frustratingly paced for a potential chef (it's no Kump/ICE/FCI, but what are you gonna do?) Classes are limited to 24.
 
It's more expensive than the others mentioned, but, as I said, it's more involved. A nice medium twixt the big guys and the one offs.

      <content>I took the techniques of french cooking (I) several years ago at the Peter Kump school, and it was excellent. I also took the Pastry (I) class and was thrilled with it.</content>

      <content>I know this is an old post, but does anyone know of any other places to take classess.  I am trying to find some on Provencal cooking.  I was supposed to take one at ICE this past winter, but I had to cancel it because of a death in the family.
