        <content>I've been searching and searching for a restaurant that serves bison meat dishes or any butcher shops that sells bison meat without any luck. Could someone please enlighten me ?

      <content>There is a guy who drives in on a big truck he at the Union Square Market he sells only bison meat ,don't know his schedule some times he there some times not call the market ,  Ithink they have a web site don't have it on hand .	</content>

      <content>You can buy it at Balducci's, Jefferson Market, Dean and Deluca, Gourmet Garage.
 All these places usually carry it. A really good mail-order source is Georgetown Farms (it was recommended to me by a Food and Wine magazine article). They have a website or you can call toll-free 1-888-EAT-LEAN.</content>

      <content>And once you find your bison meat you can check out the recipe in this issue of Gourmet magazine (which looks very yummy) for a bison standing rib.Also a Brooklyn Hts. place, Henry's End, 44 Henry St 718- 834-1776 does great things with seasonal game and may well be offering bison at this time.       <content>For the most part it is cooked just like meat - except note  that even when it is well cooked it tends to look red. At Henry's I believe it was a steak - but if they have it it could be prepared in any style that regular beef is cooked. Henry's also has other seasonal game which you might be interested in trying.I mentioned the current issue of Gourmet because it was a bison standing rib roast in (I believe an orange glaze) and they explained (at least in this preparation) the slight nuances in preparing a standing bison rib versus one of beef.Let us know how your bison comes out. </content>

      <content>careful not to dry out the meat - bison has less fat, and therefore can get tougher quicker!

      <content>Ground Buffalo can be found at Citarella off 75th and broadway. It is relatively inexpensive -- $6.99/lb -- and is great for chili, tacos, or even hamburgers. Bison is leaner than read meat and chicken, but higher in protein. A great substitute!
I think they may also have buffalo hot dogs and buffalo steaks.
